Steak is always an easy yes in my house, and air fryer steak bites are what I make when I want something hearty and a little special without having to pull out the grill or stand over a skillet. The air fryer gives each piece those browned, crispy edges while keeping the inside juicy, and the garlic butter finish makes the kitchen smell like a restaurant dinner landed at home. Cutting the steak into bite-sized pieces is the move that makes the whole thing work, because every piece gets maximum surface contact with the heat, and no one fights over the best cut.

I wasn’t sure I would actually use my air fryer when I first got it, but it has completely changed the way I cook on busy days. Air fryer chicken thighs are the other anchor in that cycle. They have the same hands-off method, but a completely different flavor profile. These steak bites are the latest to earn a permanent spot in our rotation, and they pull double duty as both a satisfying weeknight dinner and a quick appetizer that disappears fast.

How to Make Air Fryer Steak Bites

Make a simple marinade, marinate the meat quickly, then the air fryer takes over. The steak bites are ready to enjoy in about 35 minutes, after a short rest.

Ingredient Notes

  • Sirloin steak: I like sirloin because it’s easy to cut into bite-sized pieces and cooks quickly without turning heavy or greasy.
  • Seasonings: A simple mix of salt, black pepper, garlic powder, and onion powder.
  • Parsley: Fresh parsley adds those pretty green flecks.

Expert Tips

  • Cut the steak into evenly sized pieces so they cook at the same pace. Pat them dry before seasoning so the edges brown better instead of steaming.
  • Shake the basket or flip the steak bites halfway through cooking. It helps them brown more evenly and keeps any smaller pieces from sticking.
  • Give the steak some room in the air fryer basket. Crowding traps steam, and steam is the enemy of those crisp, browned edges.
  • Use a pre-made compound butter if you want to skip the garlic and parsley. Roasted garlic butter would be especially good here.
  • Finish with something bright or salty if you want to wake up the garlic butter. A pinch of flaky salt, a squeeze of lemon, or a tiny drizzle of chili crisp all work well.
  • For appetizers, thread the steak bites onto mini skewers with roasted peppers, cherry tomatoes, or grilled zucchini. It makes them easier to grab and keeps the platter from looking like “meat on a plate,” which is absolutely delicious but not always party-pretty.

On nights when I want something a little more special, New York strip steak gets the same garlic butter treatment in a single seared piece instead of bites.

Storage & Reheating Tips

Let the steak bites cool completely, then store them in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze them in a freezer-safe container or bag for up to 1 month.

Reheat in the air fryer at 375 F for 2 to 3 minutes, just until warmed through. You can also warm them in a hot skillet with a little butter or oil, but keep it quick so the steak doesn’t dry out.

How to Serve Air Fryer Steak Bites

Serve them with roasted or mashed potatoes, creamy mac and cheese, or copycat Longhorn Steakhouse rice for a fuller meal.

For a lighter plate, pile them over leafy greens, cauliflower rice,  quinoa with avocado, pickled onions, or a fried egg on top. They’re also great with simple vegetable sides like roasted green beans, honey glazed carrots, or a salad.

  • 1–2 cloves garlic minced
  • 3 tablespoons salted butter
  • 1 teaspoon parsley chopped

Instructions
 

  • Whisk together some olive oil, salt, pepper, onion powder, garlic powder, and brown sugar in a bowl. Toss the steak bites into the mixture and until well-coated.

  • Marinate for about 15–20 minutes.

  • Preheat air fryer to 400 °F. Arrange the steak in the basket in one flat layer (you might need to do two rounds). Air fry at 400 F for 4–6 minutes, or until they’re cooked just the way you like them.

  • While the steak is cooking, melt the butter in a small pan on the stove and stir in the garlic and parsley. Transfer the cooked steak bites on a plate and pour that warm garlic butter right over the top.

  • Let the meat sit for a couple of minutes to lock in the juices, then serve them up.
