This bread machine white bread bakes lean and soft, built for sandwiches rather than the center of the table. One tablespoon of butter in the entire loaf, and the crumb still comes out tender with no sweetness getting in the way.

Most bread machine white bread recipes run sweeter and richer than what I actually want for holding a sandwich together. This one uses a tablespoon of butter and a tablespoon of sugar for four cups of bread flour, which makes it lean enough that the filling is what you taste, not the bread. I use butter instead of oil here because this is the loaf I toast for sandwiches, and butter in the bread makes a noticeable difference once it hits the toaster.

The machine I use belonged to my husband’s grandmother, and my ten-year-old is the one who loads it. He layers the ingredients in order, wet on the bottom, flour across the top, yeast in a small well pressed into the center, because he knows the yeast has to stay dry until the cycle starts. If it touches the liquid early, the loaf comes out flat.

This is the bread I use for a chicken club sandwich and the bread I toast when I want something sturdier than what comes off a shelf. If you want a richer, sweeter loaf for toast with jam or alongside soup, my all-purpose bread machine bread is the one I reach for instead.

How It Comes Together

This is a dump-and-layer recipe. Everything goes into the bread machine pan in order, you select the cycle, and the machine handles kneading, rising, and baking without interruption.

The one variable worth paying attention to is machine size. This recipe is scaled for a 1.5 lb bread machine or larger. In a 1 lb machine, the dough rises past the rim of the pan, and the top of the loaf will not bake through evenly.

Select the Basic or White Bread cycle and choose your crust setting. The full cycle runs roughly three to four hours depending on the machine, and older models tend to run closer to four. Once the cycle finishes, pull the loaf out of the pan and let it cool on a wire rack for at least thirty minutes before slicing. The steam inside needs time to settle. Cut into it too soon and the center will look gummy even though the bread is fully baked.

Ingredient Notes

Bread flour. The higher protein content gives this loaf the structure it needs to slice cleanly and hold a sandwich together without compressing. All-purpose flour works in a pinch and is still suitable for holding a sandwich filling.

Yeast. Instant yeast or active dry yeast both work here. Either one can go directly into the flour well without proofing first. If your machine has a yeast dispenser, use that instead of adding it directly.

Butter. One tablespoon for the entire loaf. At this ratio the fat softens the crumb without adding too much richness.

Salt. Standard bread ratio. It controls the rise and balances the flavor. Do not reduce it or the yeast could over-proof and make the loaf collapse.

Substitutions and Variations

  • White wheat flour with no additives tested successfully in place of bread flour with a strong rise and an even, soft crumb. Use the same measurement.
  • While it isn’t my personal preference, this bread has been tested with a neutral oil (think: vegetable, avocado, or canola) in place of butter and yields an acceptable result.

What I’ve Learned Making This

This recipe fills a 1.5 or 2-lb machine pan. If your machine makes a 1-lb loaf, the dough will rise over the rim, and the top will bake unevenly. Check your machine’s manual or model number if you are not sure which size you have.

I used active dry yeast added straight to the flour well without proofing, and the rise was strong. The recipe works with instant yeast the same way. Either one goes in dry.

Bread machine loaves bake taller and narrower than store-bought bread, so I slice them differently. Cut the loaf in half, set each half cut-side down on the board, and slice from top to bottom. Sixteen slices from one loaf, each one sized to hold a real filling.

Storage & Reheating Tips

Keep the loaf tightly wrapped or in an airtight container at room temperature for up to three days. Avoid the refrigerator, which dries bread out faster than the counter does. For longer storage, slice the loaf first and freeze in a freezer-safe bag. Individual slices go straight from the freezer into the toaster.

Ingredients
 
 

  • 1 ¼ cups warm water
  • 1 tablespoon softened butter
  • 1 tablespoon sugar
  • 1 ½ teaspoons salt
  • 4 cups bread flour
  • 2 ¼ teaspoons instant or active dry yeast

Instructions
 

  • Add the warm water, butter, sugar, and salt to the bread machine pan.
  • Add the bread flour on top, ensuring it fully covers the liquid.
  • Make a small well in the flour and add the yeast, or place it in the yeast dispenser if your machine has one.
  • Select the Basic/White Bread cycle on your bread machine and choose your preferred crust setting (light, medium, or dark).
  • Press start and allow the machine to fully knead, rise, and bake the loaf.
