I’ve been cooking since I was ten and developing recipes for this site since 2021. Before that, I spent years in the restaurant industry, running front of house at two independent, family-run spots in California: a regionally known Italian pizzeria where you could watch the dough get thrown from the front counter, and a high-end Mexican restaurant a few blocks from the beach. That job taught me how a meal actually comes together, not just what goes on the plate. That’s what’s behind every recipe here.

Every recipe on this site is tested in a real home kitchen, usually several times, before it goes up. I’m the kind of cook who can’t leave a good recipe alone. My husband has learned that when he loves something I make, he may never get the exact same version twice, because I’m already trying to make it better. That obsession is the whole point: by the time a recipe reaches you, the guesswork is gone.

The proof isn’t my say-so, it’s what happens after people cook these. I now live and cook abroad, thousands of miles from where I grew up in California, which turns out to be the best possible reason to get an American classic exactly right.
