Three-Cheese Baked Mac and Cheese with a Crunchy Top

Baked mac and cheese made with three cheeses and a real roux-based sauce, finished with a golden breadcrumb top that stays crunchy. It is the hardworking crowd dish for potlucks, cookouts, and holiday tables all year long.
Cook the macaroni according to the package directions, but pull it about a minute before it says "done." It'll finish cooking in the oven, so slightly underdone here keeps it from turning mushy later. Drain and set aside.
Melt the butter in a saucepan over medium heat.
Whisk in the flour and cook for about 1 minute, stirring constantly. This cooks off the raw flour taste, don't skip it even though it feels like a small step.
Gradually whisk in the milk, adding it a little at a time and whisking as you go so the sauce stays smooth instead of lumpy. Keep whisking until the mixture thickens enough to coat the back of a spoon.
Remove the pan from the heat and stir in the cheddar, mozzarella, Monterey Jack, salt, and pepper. Stir until the cheese is fully melted and the sauce is smooth; pulling the pan off the heat first keeps the sauce from turning grainy.
Add the cooked macaroni to the cheese sauce and stir until every piece is coated.
Transfer the mixture to a greased 9x13-inch baking dish, spreading it into an even layer.
Toss the breadcrumbs with the melted butter until evenly moistened, then sprinkle them over the top of the pasta.
Bake for 25 to 30 minutes, until the edges are bubbling and the breadcrumb topping is golden brown. Finish with a 2 minute broil.
Let it sit for a few minutes before garnishing with parsley and serving; this gives the sauce a chance to settle so it scoops instead of running.
