Each Brussels sprout here wraps in a slice of bacon and a toothpick before the maple glaze goes on. They come off the pan looking like a passed appetizer, not the vegetable side left for last.
Preheat your oven to 4400 °F and line a baking sheet with parchment.
Cut larger sprouts in half and keep the smaller ones whole so everything cooks evenly.
Take a slice of bacon and wrap it around each sprout. Secure it with a toothpick, then place each piece seam side down on the baking sheet.
Drizzle the sprouts with maple syrup and add a light sprinkle of salt and pepper.
Roast for 20 to 25 minutes until the bacon turns crispy and the sprouts are tender.
Let them rest for a few minutes, pull out the toothpicks, and serve warm.
Notes
If you’re prepping early, roast them until slightly underdone. They’ll finish cooking when reheated before serving guests.
Toasted pecans or walnuts make a nice finishing touch if you want a little extra texture.
Give them a quick taste before serving. A light sprinkle of flaky salt or a small extra drizzle of maple syrup can help dial in the flavor.
If you prefer it less sweet, a small splash of balsamic vinegar or a squeeze of lemon juice before serving.
Serve: Pair with chicken cutlets, pork chops, baby back ribs, roasted turkey, or glazed ham. You can also serve it with mashed potatoes.Store: Let the sprouts cool completely, then store in an airtight container in the fridge for 3 to 4 days or freeze the sprouts and bacon separately for up to a month. Reheat straight from frozen in the oven or air fryer at 375 F for 5 to 7 minutes. Avoid the microwave because it makes the sprouts and bacon too soft.
