Chocolate cottage cheese pudding has become one of my favorite easy treats. It comes together in just five minutes with a few basic ingredients. You can switch up the flavors, add whatever mix-ins you like, and end up with a creamy, chocolatey treat.
Throw everything into your blender or food processor and blend until it’s completely smooth. Don’t forget to scrape down the sides so everything mixes evenly.
Take a little taste and see what you think. If you want it sweeter, add a touch more sweetener. If it feels too thick, splash in a bit more milk.
Pop it in the fridge for about 30 minutes if you like a firmer pudding. Or just grab a spoon and enjoy it right away.

Serve: Top it with berries, banana slices, or whipped cream for a quick snack. To make it more filling, enjoy it with coconut flour bread, chocolate pumpkin bread, rice cakes, or a muffin.Store: Store the pudding in airtight containers or small jars with lids in the fridge for up to 3 days. It may thicken, so stir before serving. Add toppings just before eating. Avoid freezing to prevent graininess.
